COTTEKILL, N.Y. - Since March 2016, the Blackboard Bistro has been serving up Americana breakfast and lunch foods in the cafeteria of the former Rosendale Elementary School. Even more than that, though, the bistro has been serving as a training program for people with disabilities. `This is a project through (The Arc Mid-Hudson), which used to be the Arc of Ulster-Greene,` Chef Dave Doyle said recently. `We provide training for people with disabilities of all sorts.` The bistro currently has eight people on staff, three of who work full-time, he added....
